I do that to Got used to it and I feel it's the best way to move around I'm interested to hear if there is anything else that can be done about this.

I notice it happens whenever I hold the CTRL button and zoom in. Don't know if that helps or not. Also:

Simply scale the plane that you have the material applied to, to match the model/first reference pic.

After playing around a bit more, I've found that CTRL, ALT and SHIFT have different effects when zooming.

@desertfox: exactly. I was looking at a still on "left" viewport where you could see how he arranged the pictures and then tried to fit them in as matching as possible to that.

Figured it out!

If you're zooming and rotating around part of the mesh but previously centred your view on a different part of the mesh, it starts to crap out like that and you have to reset your view.

Obvious answer in hindsight

Resetting your view does fix this problem, another way to work around this without having to try to reset your view is to use the dolly zoom by holding ctrl+alt and then moving your mouse up and back. This acts like your pulling your view around on a dolly. Once you mess around with this you'll see that it is very useful and also helps restore some of the zoom like resetting does.
