I just started working on my folio, but few things i wanna know:

is it too simple?
is it bad that every page is a .jpg imported into dreamweaver?

and yes more work is coming, also a real domain

Yes!

The design looks nice, but because it's all images it pretty much makes your site unuseable to;
Slow Internet Connections
Search Engines
Visually Impaired People
Text-Only Browsers
Text Readers

Especially as you haven't used alt text for the images, too (not that just adding alt text is a realistic workaround for images used on a scale this big).

Try and get as much of it as possible into just ordinary text in a font that ships with Windows - with a Mac equivalent and a "sans-serif" or "serif" fallback for both. Your pages will load much, much faster (they'll be about 10 to 50 times smaller), more people will be able to view your site, people will be able to copy/paste your email or contact details, etc... it'll just generally make it a much better site.

I'd recommend taking a few evenings and learn some basic CSS formatting skills, too. It'll allow you to make design/layout/image/colour changes in one little .css file and then all of your pages change to fit it automatically.
