The lowpoly model needs to be one object... since that is the object you're making the map for. If you have two or more objects that have separate textures then it is a good thing to make a separate normal map for each. If there are more low poly objects that use the same texture then it is easier to attach them together in a single object and generate the normal map for all of them at the same time and after that detach them.
The highpoly can be one or more objects... it doesn't matter. All you need to consider is that if you have more objects, in the first steps, where you enable Projection and click Pick you need to select from the list all the objects you want to take the normal map information from ![]()

That unwrapping can work. All you need to do is place them different. For example, put the sides of the boxes in the squares made by the edges on the uv. There are 4 holes there that can be occupied. After this reorganize everything and scale them us so you get less black space.
